These Wholesome Green Plum Clafoutis is really a hybrid of a Frangipane Tart and a Clafoutis. I wanted to make something with these beautiful green plums I got from the farmers market, but didn’t want to make a crust. I experimented and I loved how it turned out.
This tart/clafoutis makes a nice transition into fall and you can sub any seasonal fruit you fancy.
1/2 cup Vegan Butter or Ghee softened
1/3 cup Date Sugar or Coconut Sugar
3/4 Cup Almond Flour
1 Cup Full Fat Coconut Milk
1 Tablespoon Vanilla Powder or Extract
1/2 Teaspoon Almond Extract
Pinch of Salt
3 Plums or other in season fruit (cut in half and sliced thinly)
2 Tablespoons of Coconut Milk Powder for dusting
